Succotash with sweet corn, red peppers, onions and roasted sweet potatoes

OK, so I know succotash is supposed to have beans in it. My “special” version takes advantage of what was in my veg box! Plus, I roasted some of the veggies for extra flavour. You could easily throw in a tin of shelled beans to add protein and make it a main dish.

Ingredients:

1 tin sweet corn, drained

1 small onion, diced

1 red pepper, diced

1 large sweet potato, peeled and diced

Olive oil

salt and pepper

Method:

1. Cut the vegetables into roughly equal sized pieces (double the size of a piece of sweet corn).

2. Placed diced onion, sweet potato and peppers in a roasting tray. Douse with olive oil. Roast for 40 minutes.

3.Drain sweet corn. Transfer roasted veggies to frying pan and put on medium heat. Add sweet corn. Stir until sweet corn is heated.

Serve as a side dish to roasted or grilled meats.

    Mmmm definitely pinning this one to my ‘healthy’ board! It’s always hard to find meals to cook for one but this one would go great with my favourite go-to sausages, yum.

    I too had never heard of this meal, and I don’t like sweetcorn, but my husband loves it so shall give this a go.

    I always wondered what Succotash was! Looks and sounds yummy – maybe we’ll have to make it for our American friends next time they visit and give them a taste of home!

    I’ve never actually heard of this meal. Looks very tasty though and perfect for those days when all you have in the house are odd bits of vegetables.
