More healthy meals the kids love…

Jamie Hubby gave me Jamie's America for Christmas, and I have spent a few evenings browsing his recipes on my quest to find more meals the whole family will enjoy

To my delight I stumbled upon Southern Red Bean and Pork. This is real comfort food.  It's lovely and chunky and full of hidden veggies. You could even make it in a slow cooker. You'll need to buy the book for the official recipe, but here's my take on it:


Southern Red Beans and Pork

500g dried red kidney beans

smoked ham hock or smoked gammon (approx. 2kg)

large onion, chopped

bunch of celery, chopped

carrot, chopped

4 cloves garlic, crushed

2 bay leafs

1 tablespoon thyme (or something similiar like oregano)

1 tablespoon smoked paprika

1 tablespoon jerk seasoning (optional)

salt and pepper to taste

2 tins chopped tomatoes

bottle of beer

Soak the beans over night in water and pour off excess water. Pan fry onions and celery. Add garlic, spices, tomatoes, carrot and beer. Put all this in a big pot with the ham. Cook for 2 hours on low heat (or bung in a slow cooker for the day). When beans are done 9soft and creamy), take out pork and shred with a fork. Take out a couple cup fulls of the beans and mash. Return mashed bean and shredded pork to the mixture. Serve with plain basmati rice. Yum.

The girls LOVED it.

    We got Jamie Oliver’s Ministry of food last year (or the year before?) and are totally hooked on his Chiken Tikka Massala. Best I’ve ever had. His chilli con carne, chicken fajitas and roast chicken/pork/beef with his homemade gravy are all firm favourites too.
    One thing my 3 year old will always eat is good old spaghetti bolognese.

    First time here, you have a lovely site !
    We are big fans of chicken, prawn and fresh pineapple wraps in our house – chuck it all in with some cajun type spices and serve with chunky coleslaw which you can make your own by chopping some apple or pear through it. Super quick tea which my two little ones eat.
    Well, one eats the prawns and one eats the chicken but who needs perfection?

    We are big fans of sausage and lentil casserole, but can’t get sausages here so will be making that the DAY we get back.
    Current obsession, putting grated corgette in EVERYTHING! They don’t seem to notice it.

    This sounds delicious. Our latest family friendly triumph was homemade ravioli. Browned sausage, ricotta cheese, a lot of sauteed mushrooms, chopped very fine, and a bit of onion. Because they got to chop and stir and roll out pasta and fill and cut, they LOVED the eating (doused with a fresh, chunky red sauce). It wasn’t exactly a week-night speedy recipe, but it was perfect for a weekend late afternoon when everyone was cranky-bored and needed a novel activity. My next try will be one filled with pureed butternut squash, ricotta, nutmeg, and a bit of smoked chili (ancho). Nothing gets veg into kids like good pasta, I find!

    I’m a bit stuck on family friendly meals because I like my food so hot. Chili hot. I’m training the toddler, but I’m worried about slipping into baby abuse!
