Enchilada Casserole

This year I was on a mission to get my girls eating more than just chicken nuggets and sausage, beans and chips. Guess what? We did it!!

We now eat five out of seven meals together, and I only cook one dish. Who would have known?!

This is one of our favourites, and it’s super easy to make. I wouldn’t exactly call it low cal, but it is delish. You can get all the ingredients from the international section of Tesco.

Enchilada Casserole

1 package lightly salted Doritos (do NOT use any flavoured ones)

1 1kg package of mince (ground beef)

1 large onion, chopped

1 tin chopped tomatoes

1 can refried beans

1 can mild enchilada sauce

grated cheese (I use a mix of mild cheddar and red leicester)

Crush the tortilla chips and place at the bottom on a 9 by 14 casserole dish. Brown the mince and onions, mix in tomatoes and cook for five minutes. Put on top of the crushed tortilla chips. Next spread on the refried beans and cover with the enchilada sauce. Sprinkle with the cheese. Bake at 170C (350F) for 30 minutes, or until cheese is bubbling. Serve with rice and salad.

    Wow that looks very tasty, good to have suggestions for expanding the repertoire. After a year of dinner table woe, my 3yo is finally starting to open his mind to new foods, so I might give this a whirl.     Good for you! We’ve had a similar attempt over recent months, and been successful – to some degree anyway. I think, as a parent, if you want to make it happen, it will happen (because you put the effort in, I suppose).
    Today I was really aggravated, because I’d done mashed potato, since 9-yo – our pickiest – likes that. He claimed he wouldn’t eat it. I said “you have 5 minutes. If you don’t finish it by then, you won’t have your DS [which he got 2 weeks ago for his birthday] for a WHOLE MONTH.” The mashed potato vanished!
    I’ve been too soft for too long!
    You can buy canned refried beans in Tesco?

    Sounds delicious. Sadly no refried beans here, nor enchilada sauce. Grrr.

    Expat — don’t try this with Las Palmas sauce — it is too spicy. The Tesco version is very mild 😉

    I made something similar last week. It was a bit too hot for the little guy so I mashed I up and mixed some cottage cheese in (he didn’t want sour cream) and it brought the taste down enough for him to love it!

    That sounds delicious – I’m going to try it. I’m also on a mission to get the boys eating with us more, especially at the weekend – at the moment the only meals we can share are spaghetti bolognese and chicken fried in breadcrumbs, (although roast meals are becoming acceptable if served with ketchup..)

    Oh that sounds delish! Sadly, it sounds like too many points for my Weight Watcher’s though. I’ll remember it for when I have lost all my weight and can splurge a bit.

    Sounds lovley, I will try it. I only make one meal and the boys eat it. We are lucky in that they love curry etc!!

    we make something very similar, but put it in between layers of flour torillas and call it mexican lasagna…and now my pregnant belly wants some this instant!!

    If you get the mild sauce and mix equal parts with tomato purée you can make it less spicy (but still good)
